Tuscan Grilled Chicken

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1/4 cup balsamic vinegar
  • 1/4 cup extra-virgin olive oil
  • 3 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried rosemary)
  • 1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon red pepper flakes (adjust to your spice preference)
  • Salt and pepper to taste
  • Lemon wedges, for serving (optional)
  • Fresh parsley, chopped, for garnish (optional)

Instructions:

  1. In a bowl, whisk together the balsamic vinegar, olive oil, minced garlic, chopped rosemary, thyme, oregano, basil, red pepper flakes, salt, and pepper to make the marinade.
  2. Place the chicken breasts in a resealable plastic bag or a shallow dish. Pour the marinade over the chicken, making sure each piece is coated evenly. Seal the bag or cover the dish and refrigerate for at least 1 hour, or ideally overnight, to allow the flavors to develop.
  3. Preheat your grill to medium-high heat. If using charcoal, wait until the coals are white and glowing.
  4. Remove the chicken from the marinade and let any excess drip off.
  5. Grill the chicken on the preheated grill for about 6-7 minutes per side or until the internal temperature reaches 165°F (74°C) and the chicken is cooked through. The cooking time may vary depending on the thickness of the chicken breasts.
  6. Once the chicken is cooked, transfer it to a serving platter. You can squeeze some fresh lemon juice over the grilled chicken for an extra burst of flavor.
  7. Optionally, garnish the chicken with chopped fresh parsley for a touch of color and freshness.
