Roasted Brussel Sprouts

Ingredients:

  • 1 pound Brussels sprouts, trimmed and halved
  • 2 medium carrots, peeled and cut into 1-inch pieces
  • 1 medium red onion, peeled and cut into wedges
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • Salt and black pepper to taste

Instructions:

  1. Preheat your oven to 425°F (220°C).
  2. In a large mixing bowl, combine the Brussels sprouts, carrots, and red onion.
  3. In a small bowl, whisk together the olive oil, minced garlic, dried thyme, salt, and black pepper.
  4. Drizzle the olive oil mixture over the vegetables in the mixing bowl. Toss well to coat the vegetables evenly.
  5. Spread the vegetables in a single layer on a baking sheet. Make sure they are not crowded, as this helps them roast evenly and become crispy.
  6. Place the baking sheet in the preheated oven and roast for about 25-30 minutes, or until the vegetables are tender and browned, stirring once or twice during cooking for even browning.
  7. Once the vegetables are nicely roasted, remove them from the oven and transfer to a serving dish.
  8. Serve the roasted vegetables with Brussels sprouts as a side dish with your favorite main course. They are delicious on their own or can be served with a drizzle of balsamic glaze or grated Parmesan cheese for added flavor.
